Suguaday is a ready-to-eat lightly salted appetizer made from the freshest wild northern fish found above the Arctic Circle. The concept of this excellent appetizer is quite simple: raw fish cut into small pieces, with minimal salt, pepper, and a bit of sunflower oil. You can also add onions, soy sauce, or lemon, according to your preference. The cusk eel is a member of the salmon family, with white meat that has no strong fishy odor. Like other whitefish, the meat of the cusk eel is rich in fat, which gives it a unique tenderness and juiciness. This is due to the cusk eel's habitat in very cold climates. It is commonly found in rivers and lakes in the northern European regions and northern provinces of Canada.
