Cold-smoked sturgeon has a soft, oily, and juicy meat with a light nutty aftertaste. It has a firm texture. During the cooking process, natural alder wood chips are used, which gives the fish a beautiful golden hue. The flesh is firm, not crumbly, and does not fall apart. Lightly salted, with a delicate smoking degree, not overpowering, and an elegant aroma that only enhances the taste. During cold smoking, the temperature does not rise above 25°C, and the processing time can last several days. As a result, excess moisture is removed from the fish, it dries out and becomes denser and less fatty. The fish is prepared naturally – on natural alder chips, without any additives. The sturgeon meat is already sliced into neat pieces, all that remains is to arrange it on a plate, or it can also be used for making sandwiches.
