The most unusual and unpredictable in color and taste. Siberian sturgeon caviar is bronze-colored and can range from greenish to brownish or yellowish hues. This product has a distinct oceanic flavor. In nature, female Siberian sturgeons mature at the age of 13–18 years. This caviar is intermediate in fat content between beluga and sevruga, but it will appeal to many gourmets. Black caviar does not pair well with sandwiches and butter. While large red caviar can be well-appreciated in such a presentation, the small eggs of black caviar get overwhelmed by creamy butter and bread. Black caviar can be used to prepare a variety of appetizers or added to different dishes: soft-boiled eggs, pancakes, baked potatoes with cream, spaghetti with caviar and sauce, sushi, Olivier salad with shrimp, and much more.
