Suguaday is a ready-to-eat lightly salted appetizer made from the freshest wild northern fish found above the Arctic Circle. The concept of this excellent appetizer is quite simple: raw fish cut into small pieces, with minimal salt, pepper, and a bit of sunflower oil. You can also add onions, soy sauce, or lemon, according to your preference. The Arctic grayling is a member of the salmon family, with white meat that lacks a strong fishy odor. It is most commonly found in the Arctic Ocean and prefers to spawn in the cold waters of the North, in regions of Asia or America. This fish is quite selective, choosing to spawn and inhabit only clean, oxygen-rich waters. This characteristic ensures that its meat is free from harmful chemicals and heavy metals. Its taste somewhat resembles that of an ideal mackerel, although it is not related to this species, but it has less fish oil and a milder, less pronounced aroma.
