The fish itself is very fatty, which is not surprising—it is, after all, oilfish. Tender, it melts in your mouth. At the same time, it does not fall apart under the knife; it is quite firm. Lightly salted, with a distinct smoked flavor, very similar to that unforgettable taste from childhood. It is perfect for sandwiches with black bread. It is caught together with tuna in the Pacific Ocean. During cold smoking, the temperature does not rise above 25°C, and the processing time can last several days. As a result, excess moisture is removed from the fish, it dries out and becomes denser and less fatty, while retaining its nutritional value and beneficial properties. The fish is prepared naturally – on natural alder chips, without any additives.
